One can of pumpkin is not two cups of pumpkin

Type "pumpkin bread recipe" into any search engine and read the ingredient lists for the first ten results. The amount of pumpkin will be given in three different ways. Some recipes call for one 15-ounce can. Some call for one cup. Some call for two cups. Some call for one and three-quarter cups. The recipes will use these numbers as if they described the same amount. They do not.
The standard American can of canned pumpkin is labelled 15 ounces, which is 425 grams by weight. USDA publishes the density of canned pumpkin at 245 grams per cup. That means one can holds 425 divided by 245, or about 1.73 cups by volume. Not two cups. Not one and a half cups. One and three-quarter cups if the recipe wants to be honest about the can it came from.
Where the numbers diverge
Recipes that say "one 15-ounce can, or two cups" are wrong by 15 percent. There is not two cups' worth of pumpkin in a 15-ounce can. A baker who buys two cans to make a double batch ends up with 3.46 cups, not four, and either shorts the recipe or opens a third can.
Recipes that say "one cup canned pumpkin" and rely on King Arthur's chart figure of 227 grams per cup under-weigh by about 8 percent compared to USDA. This is a smaller error than the can-and-cup mismatch, but it stacks. A recipe already unsure whether "one can" means one and three-quarter cups or two is now also unsure whether "one cup" means 227 or 245 grams. The final ratio of pumpkin to flour ranges over about twenty percent depending on which set of assumptions the writer worked from.
Twenty percent of pumpkin is the difference between a pumpkin bread with an audible squelch when the knife cuts it and a pumpkin bread that is essentially spice cake with orange colour.
Why King Arthur's 227 is wrong here
The 227 gram figure for a cup of canned pumpkin comes from taking 8 US fluid ounces and multiplying by 28.35 grams per ounce — the conversion for weight ounces, not the volume-to-weight conversion for a real substance. King Arthur gives 227 grams per cup for milk, yogurt, heavy cream, Greek yogurt, buttermilk, ricotta, evaporated milk, vanilla extract and pumpkin purée. That single number cannot be the weight of nine physically distinct products, and for most of them it is not. The density that 227 grams per cup implies is lower than water; the products are all denser than water. Canned pumpkin is 90 percent water plus dense fibrous solids, so it must weigh more than 227 grams per cup, not less.
What the honest numbers give you
USDA gives canned pumpkin at 245 grams per cup. The standard 15-ounce can holds 425 grams. That is 1.73 cups.
If a recipe was developed and tested against those numbers, use those numbers. If a recipe was developed and tested against "one can" without specifying a cup amount, buy the standard 15-ounce can and use the whole thing. If a recipe calls for two cups of canned pumpkin, either buy two 15-ounce cans and use 3.46 cups worth, or shop for the larger 29-ounce can (which holds 819 grams, or 3.34 cups) and use the whole thing.
Where a recipe insists that one 15-ounce can equals two cups, ignore the volume claim and go by weight.
The label problem is bigger than pumpkin
Canned pumpkin is one of many products where the label weight and the recipe volume disagree. Sweetened condensed milk labels 14 ounces per can, which is 397 grams, or 1.30 cups at USDA density — not one cup, as many caramel recipes assume. Evaporated milk labels 12 ounces, which is 340 grams, or 1.35 cups by density. Coconut milk labels 13.5 ounces per can, which is 383 grams, or 1.70 cups.
In each case the can is a whole-number-of-ounces amount and the cup conversion is not clean. The safest habit is to weigh. The next-safest habit is to open the can, pour it into a measuring cup, and see what fits. The least-safe habit is to trust the label to line up with the recipe.
