The dataset
Every ingredient on this site, with its sources, its confidence grade and the date it was last checked, is published as a single JSON file: data.json. It is free to use and free to cite.
It currently holds 5 ingredients, of which 1 publish no figure at all because their sources measure different things.
What the fields mean

| density_g_per_ml | The published figure. Always equal to one named source exactly, never an average. Null where the figure is withheld. |
| withheld | Present and true where a state exists physically but has too few independent sources to publish. |
| sources | Every source consulted, including any that were checked and rejected, with the reason. |
| method | How the source says the cup was filled, in the source’s own words. |
| confidence | high, medium or low. Set by hand, not computed from the spread. |
| last_reviewed | When the figure was last confirmed to still match the source. |
The rules it is built to
Three sources per figure: USDA FoodData Central, a published culinary reference, and an independent third that is not another baking chart. The published figure matches one of them exactly. Sources more than five percent apart stop the entry rather than being averaged. A state is only split by filling method where a source names the method — never inferred from a figure that happens to match. Anything that cannot meet those rules is withheld, and the reason is recorded in the entry itself.
