Hazelnut butter is roasted ground hazelnuts, sometimes with a small amount of sugar or salt, processed to a smooth or slightly coarse paste. It is a distinct product from three closely related commercial items that people often conflate. First, hazelnut spread in the Nutella style is mostly sugar and palm oil with 13 percent hazelnuts and cocoa; King Arthur lists it at 320 grams per cup and it will get its own entry. Second, hazelnut praline paste is a 50-50 patisserie preparation of caramelized hazelnuts and sugar used in French pastry; King Arthur lists it at 312 grams per cup and it will also get its own entry. Third, gianduja is a chocolate and hazelnut confection distinct again. This entry covers pure or lightly sweetened hazelnut butter only.
The data does not converge to a single figure. Two pure hazelnut butter producers land at the low end: Dastony at 28 grams per 2-tablespoon serving (224 grams per cup) and Georgia Grinders at 30 grams per 2-tablespoon serving (240 grams per cup). Wikipedia's cross-nut-butter reference table also lists hazelnut butter at 15 grams per tablespoon, matching Georgia Grinders. USDA's Branded Foods entry for Wildfare Inc. Hazelnut Butter (ingredients: hazelnuts, sugar) lists 32 grams per 2 tablespoons, extrapolating to 256 grams per cup, and generic hazelnut butter references at Snapcalorie match. The split is not noise; it corresponds to whether the product includes added sugar. Sugar dissolves into the oil-suspended matrix and fills interstitial air pockets left by coarser grinds, raising bulk density by roughly 14 percent between the pure and sweetened tiers.
The physics check supports both ends. USDA whole shelled hazelnuts weigh 142 grams per US cup at approximately 0.600 grams per milliliter. Ground to butter, density rises to 0.95 to 1.08 g/mL, a 1.6 to 1.8x increase consistent with the whole-to-butter ratio observed with cashews (150 to 257 = 1.71x) and other tree nuts. Hazelnut composition of roughly 61 percent fat, 15 percent carbohydrate, and 15 percent protein by weight of the nut supports the lower-density end for a pure product without sugar filling voids.
King Arthur has no entry for pure hazelnut butter in their ingredient weight chart. Their two closest entries, Hazelnut spread at 320 grams per cup and Hazelnut Praline Paste at 312 grams per cup, are both correct for those specific sweetened products but should not be substituted for pure hazelnut butter. If a recipe calls for hazelnut butter without specifying a brand, the safe assumption is roughly 240 grams per cup for typical pure butter or 256 grams per cup for a lightly sweetened product; the twenty-gram spread across a full cup is enough to shift the outcome of ganaches, glazes, and no-bake fillings where the butter is the main structural ingredient. Weighing directly from the jar removes the guesswork.
