Fats and oils
Continuous-phase substances that flow: oils, softened or melted fats, nut butters, plastic pastes at the boundary of fat and water. Density is close to uniform within a substance and between measurements, so two sources should agree closely.
This category is held to a 5% tolerance. Where two sources disagree by more than that, the entry publishes the range they cover rather than picking one. Where a source figure falls outside an independent physical standard (Codex Alimentarius for olive oil, for instance), it is rejected on physics rather than range-published.
