Slivered almonds

One US cup of slivered almonds weighs 108 grams. Going the other way, 100 grams is about 0.93 cups.

Also called almond slivers, julienne almonds.

Most sites print a number for a cup of slivered almonds and do not say where it came from. This page publishes 108 g, names both sources behind it — USDA FoodData Central and King Arthur — and holds it at medium confidence until an independent third source confirms it.

Where this number comes from

Slivered almonds are whole blanched almonds cut lengthwise into elongated stick shapes, typically about 2-3 millimetres wide and 2-3 centimetres long. They sit between whole and sliced almonds in cup weight because the stick geometry packs more efficiently than flat slices but less efficiently than the roughly ovoid whole nut.

USDA FoodData Central (FDC 170567, Nuts, almonds) publishes portion measurements for whole, sliced, slivered and ground almonds from the same underlying nutrient record. The slivered portion is 108 grams per cup, implying a density of 0.4565 g/mL on the US customary cup of 236.5882365 mL. King Arthur publishes 114 grams for the same preparation, implying 0.4818 g/mL. The gap between the two is 5.5%, comfortably inside the 10% tolerance this site applies to milled and packed-piece ingredients, so both figures are accepted and the USDA figure is published as the site's primary value.

The three almond preparations form a clean packing hierarchy: whole almonds at 143 g per cup (roughly uniform ovoid shape nests reasonably tightly), slivered at 108 g per cup (stick shape packs randomly with more air gaps), sliced at 92 g per cup (flat wafer shape traps the most air of the three). Same nut, same nutrient composition per gram, three different cup weights depending only on the geometry of the pieces. A recipe calling for a cup of almonds is silently choosing one of these three depending on the preparation, and the weight difference between the extremes is 55% — large enough that swapping preparations without adjusting for weight will change the outcome of the recipe.

Slivered almonds are almost always blanched (skin removed) before slivering, because the skin fragments would produce an unsightly product and the slivering machinery works cleanly only on skinless nuts. Toasted slivered almonds have essentially the same weight as untoasted, since toasting removes only a small percentage of water.

This entry is specifically for the standard slivered-almond preparation. It does not cover sliced almonds (thinner and flatter, see the sliced-almonds entry); whole almonds (see the almonds entry at 143 g per cup); almond flour or almond meal, both of which are ground much finer and packed at higher densities; or almond paste, which is a dense sugar-and-almond product with its own separate density.

The confidence grade is medium because two independent sources agree within tolerance and both are widely used references, but no third source at a higher tier (a standards body or an independent bench measurement) confirms the figure. High confidence will require a third independent measurement.
