Diced Celery

One US cup of diced celery weighs between 101 and 142 grams (3.6 to 5 ounces), depending on how the cup is filled and which source measured it. That range is the answer; a single number would not be. Every figure behind it is below, with the method each source used.

Also called chopped celery, celery diced, diced celery stalks, chopped celery stalks, celery chopped.

Most sites print one number for a cup of diced celery. This page prints 101 to 142 grams, because that is what USDA SR Legacy "Celery, raw" (FDC 169988), USDA Food Buying Guide for Child Nutrition Programs, celery, fresh, trimmed, diced, USDA Food Buying Guide for Child Nutrition Programs, celery, diced, ready-to-use, The Culinary Institute of America, Conversions chart and King Arthur Baking Ingredient Weight Chart actually measured, and it names the method behind every figure rather than picking a favourite.

Two or more sources describe the same way of filling the cup and still disagree, by 40.6%. That is more than this site will average over, so all the figures stand and none is chosen. Sources span 101-142 g per cup, a 41% gap, over the 10% tolerance. USDA's cup of chopped celery is 101 g, but its own tablespoon works out to 120 g; USDA's school Food Buying Guide gives 122-141 g for diced celery; the Culinary Institute of America gives 113 g; King Arthur gives 142 g. No single figure is published.

Why this page publishes a range

A cup of diced celery weighs 101 to 142 g (3.6 to 5 oz). USDA's cup of chopped celery is 101 g, its tablespoon works out to 120 g, USDA's school Food Buying Guide gives 122-141 g for diced celery, the Culinary Institute of America 113 g, and King Arthur 142 g. The sources disagree by more than the 10% tolerance, so this entry publishes the range.

Celery is 95% water, among the wettest of vegetables, and its crisp, fibrous stalks are close to the density of water. Diced celery is a pile of small crescents and arcs, the cross-section of a curved, ribbed stalk, and those shapes do not nest well. How much air they trap depends on the size of the dice, how much of the hollow inner curve each piece keeps, and how hard the cup is pressed.

USDA SR Legacy "Celery, raw" (FDC 169988) lists 1 cup chopped at 101 g, but its 1 tablespoon at 7.5 g scales to 120 g per cup, so USDA's own record spans 19%. USDA's Food Buying Guide, the yield tables used in school kitchens, gives 12.3 quarter-cup servings of diced celery per pound as purchased at 83% yield, which is 122 g per cup, and 12.9 servings for ready-to-use diced celery, 141 g per cup. The Culinary Institute of America's conversion chart gives 1 cup diced at 4 oz, 113 g, and one stalk at about half a cup.

King Arthur lists diced celery at 1 cup = 5 oz = 142 g, at the top of the range. The same 5 oz appears in King Arthur's chart for diced onions, carrots and bell peppers and for sliced olives, so it reads as a round working figure rather than a measurement of celery. It is close to the Food Buying Guide's ready-to-use dice, which is cut by machine into small even pieces that pack tightly, so it is not rejected, but for celery diced by hand it is on the heavy side.

Pre-cut tubs are not much help: Wegmans prints 2/3 cup at 85 g, the reference serving for vegetables, and H-E-B describes its 7-oz tub of chopped celery as about 2 cups, roughly 99 g per cup.

Practical guidance: for celery diced by hand to about 1/4 inch and spooned into the cup, use 115-120 g; for a coarser chop loosely filled, about 100 g; for small machine-cut dice, up to 140 g. A medium stalk weighs about 40 g by USDA's figure and gives about 1/3 cup diced; the Culinary Institute counts a larger stalk as half a cup. For mirepoix, stuffing and soups, where celery is one part of a ratio, weigh it alongside the onion and carrot.
