Where this number comes from
Sources agree within 0.9%. Honey is a supersaturated sugar solution with no packing state, so unlike flour or brown sugar there is no measuring method that changes what a cup holds, and one figure serves. USDA FDC 169640 publishes a cup at 339 g (1.4329 g/ml) and a tablespoon at 21 g (1.4202 g/ml), a spread of 0.89%; the cup is published here because rounding to the nearest gram on the larger measure carries a narrower band.
King Arthur's chart gives the tablespoon as 21 g, the same figure USDA publishes, so the two sources agree in a way that may reflect a shared origin rather than an independent measurement. This is recorded rather than treated as corroboration. What genuinely varies in honey is moisture content, which is what national grading standards regulate: the US Grade A limit is 18.6% moisture, and higher-moisture honey is measurably lighter per cup.
Density is therefore a property of the particular jar to a greater degree than for oil or sugar, and figures between roughly 1.38 and 1.45 g/ml are reported across floral sources and moisture levels. No standards body publishes a density for honey, only moisture limits, so the Codex route that resolved olive oil is not available here. Refractometry, the standard method for honey moisture, measures refractive index and converts to moisture via Chataway's table; deriving a density from that is a calculation rather than a published figure and does not qualify as a source under rule 3.
The National Honey Board's reference of 11.84 lb per US gallon, about 1.418 g/ml, is widely quoted but was not verified at source and is not cited here. USDA also publishes a packet at 14 g, described as 0.5 oz; it is a packaging weight rather than a volume measure and is not recorded as a yield. Two sources only, so this entry does not meet rule 2 and is held at medium confidence until an independent third is found.
