Graham Flour: why 96 g per cup is wrong
King Arthur Baking ingredient weight chart publishes 96 g per US cup of graham flour. This site rejects that figure and publishes 120 g instead, from Bob's Red Mill Whole Wheat Graham Flour (USDA Branded, UPC 039978003096) (density 0.5072 g/mL, matching the composition of the substance). The reason:
King Arthur's chart conflates two distinct products under one line item: 'Whole Wheat Pastry Flour / Graham Flour' at 96 g/cup. The 96 g figure is defensible for a soft-wheat pastry flour (KA's own whole wheat pastry flour is milled from soft wheat), but it does not describe graham flour as sold by Bob's Red Mill (hard red spring wheat, coarser grind) or Hodgson Mill. Multi-producer convergence shows graham flour proper at 120 g/cup, 25% higher than KA's figure. This is a scope error, not a pure density measurement error: KA has treated a distinct product category as if it were their own house product.
