Sprouted Wheat Flour: why 113 g per cup is wrong
King Arthur Baking Company – Ingredient Weight Chart publishes 113 g per US cup of sprouted wheat flour. This site rejects that figure and publishes 120 g instead, from King Arthur Baking Company – Sprouted Wheat Flour nutrition label (USDA Branded) (density 0.5072 g/mL, matching the composition of the substance). The reason:
Fluid-oz density pattern (chart treats '4 oz' as the primary weight, undershooting actual density). Contradicted by KA's own FDA-regulated nutrition label on the identical product, which reports 30 g per 1/4 cup = 120 g/cup, matching the three-source producer convergence.
The arithmetic
| Source | 1 cup | Density | Status |
|---|---|---|---|
| King Arthur Baking Company – Ingredient Weight Chart | 113 g | 0.4776 g/mL | Rejected on physics |
| King Arthur Baking Company – Sprouted Wheat Flour nutrition label (USDA Branded) | 120 g | 0.5072 g/mL | Published here |

I built SwapGenie for the problem this site cannot solve: the label. It reads a barcode, scores the product against your own allergens and diet rather than a generic grade, and suggests what to buy instead. Android now, iOS in progress.
SwapGenie is in closed testing, and the first 100 testers get 3 months of Pro free.
