Sriracha: why 240 g per cup is wrong

Huy Fong Sriracha Hot Chili Sauce label publishes 240 g (8.5 oz) per US cup of sriracha. This site rejects that figure and publishes 276 g (9.7 oz) instead, from Flying Goose Sriracha, 455 mL bottle (Pomona technical sheet) (density 1.1648 g/mL, matching the composition of the substance). The reason:

5 g in a 5 mL teaspoon is the weight of water, and the 96 servings are the bottle's 482 g net weight divided by 5 g, not a measurement. USDA's record for sriracha is 71.8% water carrying 15.1% sugars, about 5.4% salt and ground chili and garlic, 28% solids in all, which weighs about 1.12 g/mL; a sauce that dense cannot weigh what water weighs. Flying Goose's 455 mL bottle holds 530 g, 1.165 g/mL.

The arithmetic

Cup weight, implied density, and how it compares to water (1.000 g/mL) for sriracha.
