Crushed pineapple

For drained, spooned and leveled, one US cup of crushed pineapple weighs between 195 and 237.5 grams (6.9 to 8.4 ounces), depending on how the cup is filled and which source measured it. Use 195 grams (6.9 ounces) as USDA weighs a drained cup. Every figure behind it is below, with the method each source used.

Undrained, fruit and juice: 244 g (8.6 oz) per cup.

Also called canned crushed pineapple, drained crushed pineapple, crushed pineapple in juice, tinned crushed pineapple.

Most sites print one number for a cup of crushed pineapple. This page prints 195 to 237.5 grams, because that is what USDA SR Legacy "Pineapple, canned, juice pack, drained" (FDC 167767), USDA Food Buying Guide for Child Nutrition Programs (crushed pineapple, No. 2 can, drained), USDA Food Buying Guide for Child Nutrition Programs (crushed pineapple, No. 300 can, drained) and USDA Food Buying Guide for Child Nutrition Programs (crushed pineapple, No. 10 can, drained) actually measured, and it names the method behind every figure rather than picking a favourite.

Two or more sources describe the same way of filling the cup and still disagree, by 21.8%. That is more than this site will average over, so all the figures stand and none is chosen. USDA's drained cup and the Food Buying Guide's 20-ounce can both give 195 g; the Guide's 15-ounce can gives 223 g and its No. 10 can 238 g. How much juice stays in the shreds decides the weight, and the 22% spread is past the 10% this site allows for fruit pieces, so the range is published, with 195 g as the working figure.

Where this number comes from

A cup of drained crushed pineapple weighs between 195 and 238 g (6.9 to 8.4 oz), depending on how much juice stays in it. Use 195 g, which is what USDA weighs and what a drained 20-ounce can measures. Undrained, fruit and juice together, a cup weighs 244 g. King Arthur Baking's 256 g for a drained cup is heavier than the undrained can and is rejected.

Crushed pineapple is canned pineapple cut into small shreds and packed in juice or syrup. It goes into carrot cake, hummingbird cake, pineapple upside-down cake, dump cakes, muffins and gelatin salads, and recipes ask for it drained, undrained or "well drained", which changes the weight by more than a quarter.

Drained, the sources disagree because draining is not a fixed process. USDA's drained juice-pack record weighs a cup of crushed pineapple at 195 g. The USDA Food Buying Guide, which counts quarter-cup servings per can, gets the same from a 20-ounce can: 13.8 oz of drained fruit, 2 cups, 195.6 g a cup. Its 15 1/4 oz can gives 222.6 g and its No. 10 can 237.5 g. The 22% spread is past the 10% this site allows for fruit pieces, so the page shows the range, with 195 g as the working figure, because it is the figure two USDA measurements share and the can most home cooks buy.

Undrained, the sources agree. Dole's 20 oz can gives half a cup, fruit and juice, as 122 g, 244 g a cup. USDA's juice-pack record gives 249 g for a cup of crushed, sliced or chunks with liquid, and the Food Buying Guide's No. 10 can comes to 242.8 g. This site publishes Dole's 244 g.

The physical check settles King Arthur's figure. King Arthur Baking's chart lists "Pineapple (crushed, drained)" at 1 cup = 9 oz = 256 g, 1.08 g/mL. A drained cup is shreds of fruit with the juice poured off and air in its place, so it must weigh less than the same cup filled with fruit and juice, which weighs 243 to 249 g. 256 g is heavier than that, and heavier than pineapple juice itself, about 1.05 g/mL. A cup of fruit packed down hard with its juice still in it could come close; a drained cup cannot.

Why the drained figures run from 195 to 238 g: pineapple shreds hold juice like a sponge, so how long they drain, and whether they are pressed, changes what is left in the cup. The Food Buying Guide's larger cans came out heavier than its 20-ounce can, and the guide does not say how each was drained. A few minutes in a sieve and a level cup is the reading that matches USDA's 195 g.

Practical guidance: for "1 cup crushed pineapple, drained", use 195 g, drained in a sieve without pressing. A 20-ounce can gives about 2 cups drained, and an 8-ounce can, at the same share of fruit, roughly 3/4 cup. For "undrained", use 244 g per cup, fruit and juice together. Weigh the pineapple into the bowl whenever a recipe's moisture matters, because a quarter more juice can make a cake gummy.
